The freshness of PrioratReflection of new young whites from the Priorat
Clos Bartolomé Blanc is a clear reflection of the new young whites of the Priorat. Garnatxa Blanca and Macabeu harvested on vines that are between 40 and 75 years old from our Finca “Els Molins” and “El Mas del Caldera”. These old vines are planted in steep, steep fields, called Costers, formed of slate, locally called llicorella, withstanding the variations of the weather in these lands with ease to bear all their fruit.
To achieve all this, we have come to an understanding of our vines and we harvest them in the way our ancestors did: cultivating them with respect and sensitivity, our soil seems to understand and generously compensates us for our will, the Celler Bartolomé’s traditional attitude.
Currently, technological progress allows us to take advantage of the characteristics of the excellent vineyards, pointing out the optimal moments for hand-harvesting, the use of cold to lower the temperature of the grapes before entering the cellar and finally perform: first, the fermentation at a perfectly controlled temperature, and then the subsequent fermentation processes to absorb and savor the landscape, the spirit and the soul of the Priorat.
Collection and production
The varieties are mixed at the entrance to the cellar, previously the grapes remain in a cold room for 24 hours at a temperature of 6°. Afterwards, we destem the grapes and macerate them at 6° for 48 hours to obtain the aromas present in the skins. Pressed gently in a vertical and static press, the must obtained remains at 10° for 48 hours before being de-slurried.

Aging
Fermentation was carried out for 30 days at a controlled temperature of 17°. At rest for a few months, it is bottled in January.
Wine characteristics
Pale yellow color, clean and bright, with greenish reflections and a golden rim. On the nose, we find the distinct personality of Macabeu and Priorat White Grenache, with characteristic notes of flowers and white fruits, peach, fennel, and wild herbs. On the palate, balsamic and fresh notes stand out, hinted at by the nose. It is an unctuous wine, with citrus flavors, silky with volume, flavorful, and with balanced acidity. The finish is very persistent and aromatic, offering a touch of sweetness that surprises and captivates. A fresh and authentic minerality.
